Paleo Oreos?
Who says you can’t enjoy a little JUNK food now and again?
Totally Paleofied, of course.
I always had a ‘thing’ for Oreos. The crumbly biscuit, the
sweet, sweet cream. So imagine my joy when renowned Paleo
chef Kelsey Ale introduce me to… drum roll…
Paleo Oreos!
They taste just like the real thing (but without the
health-destroying ingredients).

Paleo Oreos
Chocolate Cookie Ingredients

3⁄4 cup almond flour
-
1⁄3 cup arrowroot starch
-
1⁄4 cup cacao powder
-
1⁄2 tsp baking soda
-
1⁄4 tsp salt
-
1⁄4 cup coconut oil, melted
-
1⁄4 cup maple syrup
-
1 tsp vanilla
-
Filling Ingredients
-
2 tbsp honey
-
1⁄2 tsp vanilla
-
2 packets powdered stevia
-
3 tbsp arrowroot starch
-
1⁄2 cup palm shortening
Prepare the dough:
1. Combine almond flour, arrowroot, cacao, baking soda,
and salt in a medium mixing bowl.
2. In a small mixing bowl, combine oil, maple syrup, and
vanilla, and whisk to combine.
3. Add oil mixture to almond our mixture and combine to
form a dough.
4. Scoop dough onto a sheet of parchment paper and form
into a log. Roll up the log in the parchment paper and put in
the freezer to set, about 30 minutes.
The creamy filling:
1. In a medium bowl, whisk honey, vanilla, stevia, and
arrowroot into a smooth paste.
2. Add shortening and use an electric mixer or whisk to whip
the frosting together, and then set aside.
